The Lemon & Pepper Promo Was a Great Success!

The promotion ended earlier meeting the goal of 15k entries within 3 days! Despite a shaky start, we managed to get back online and extend the original goal of 10k to 15k.

A sample of Lemon & Pepper will be sent out, please allow 3-4 weeks for processing and shipping.

I’ve been asked about the size of the sample… We are not mailing out tiny packages of 5-gram samples as you would find in your local newspaper. At Tampico Spice, a sample is a cellophane package of Lemon & Pepper, similar to what you would find at any grocery store.

Coloring with Spices

Here is a simple, quick way to color your seasonings or spice blends using common spices and what you have at home without changing the flavor of the blend.

Whether be for your personal line of seasonings that you want to sell and you want to make it hard for people to tell what spices you’re using….

Or simply want to achieve a particular color for your seasoning blend without the costly use of food colors or oleoresin.

Below is a list of which spice you can use and the color it produces.

  1. Paprika: Red (Color varies from which paprika is used)
  2. Turmeric: Yellow Color
  3. Curry: Off-Yellow (Tad spicy note)
  4. Parsley powder: Green color

*To achieve color, use 1/4 teaspoon of  Corn Oil or Vegetable Oil. If your seasoning blend contains salt or sugar, mix oil with salt first before adding other spices (Easier to mix).

Scent and Flavors of Spices

Did you ever wonder, if you could substitute certain vegetables for spices while still having the same aroma and flavor. Are you looking to achieve a particular flavor or scent that’s simple and affordable for your seasoning blend or dish?

I often get asked what a person can add to kick up their dish or if they could use a certain spice that would compliment their dish. So I decided to post a list of common spices that you can use to add to your dish to give it a particular aroma and flavor. I recommend adding just a pinch, early in the cooking process.

Here is a list of common spices, with their particular aroma and flavor:

  1. Star Anise: Black Licorice aroma (strong note)
  2. Black Pepper: Spicy, warms near the center of the tongue
  3. Celery: Celery  (pungent note)
  4. Coriander: Celery aroma, slight lemony-taste (strong note)
  5. Dill Seed: Pickles note (soft note)
  6. Sweet basil: Mint flavor (soft note)
  7. Cumin: Earthy flavor (strong note)
  8. Fenugreek: Maple flavor
  9. Nutmeg: Nutty flavor (strong note)
  10. Sesame seed: Nutty flavor (soft note)
  11. Tarragon: Anise-like flavor
  12. White Pepper: Spicy, Musty note, warms the sides of the tongue
