quart milk....1/2 cup sugar....2 eggs
1/3 cup raw regular cooking rice...2 egg yolks
1 1/2 teaspoons pure vanilla extract....1/2 teaspoon salt
1/2 teaspoon Tampico ground cinnamon
1/4 teaspoon Tampico ground nutmeg
In
a medium saucepan combine milk, rice and salt, Bring just
to boiling point. Cover, reduce heat and simmer 35 to 40 minutes
or until rice is very tender. In a small mixing bowl beat
eggs and egg yolks. Gradually beat in sugar. Remove rice mixture
from heat and slowly stir in egg mixture, being careful not
to curdle. Cook over low heat, stirring constantly fro 5 minutes
or until mixture just begins to thicken and coats a metal
spoon. Remove from heat; cool. Stir in vanilla extract, cinnamon
and nutmeg. Chill.
