:: SHRIMP PATTIES::

4 Large Eggs, separated, 3 ounces Tampico Shredded Shrimp, dash of pepper, 1/2 cup cooking oil

Beat egg whites until stiff. Carefully fold in yolks, shredded shrimp and pepper. Heat oil in large skillet. Drop shrimp mixture, one heaping tablespoon at a time, into hot oil. Fry both sides until browned. Serve hot. Patties may be served plain or with lettuce salad. Heat canned peeled tomatoes; pour over pattied, if desired. Makes approximately 20 patties
