large cones piloncillo (add an additional cone if more sweetness
is desired.
1 cinnamon stick.....1 clove.....4 cups of water.....6 slices
toast cubed.....3 apples, peeled and sliced...1 cup chopped
almonds..... 1 cup raisins...1/2 pound Monterey Jack Cheese,
cubed.
Combine
the piloncillo, cinnamon stick, clove and water in a saucepan
and bring to a boil. Simmer until the mixture has cooked to
a light syrup. Remove the spices, and set the syrup aside.
Butter an oven casserole dish and cover the bottom with the
cubes of toast. Add a layer each of apple, almonds, raisins
and cheese, repeat until all ingredients are used up. Pour
the syrup over all. Cover and put in a preheated oven at 350
degrees F for 30 minutes. May be served hot or cold.
