Bacon Herb Roasted Potatoes

Ingredients

½ cup extra virgin olive oil
1 tablespoon Tampico’s Italian Seasoning
4 fresh shallots, thinly sliced
2 pounds fingerling potatoes, each one cut in half lengthwise
2 tablespoons Tampico’s bacon salt
1 tablespoon Tampico’s ground black pepper

Serves 4 to 6

Instructions

Preheat oven to 375°. Toss all ingredients in a large bowl and marinate for 30 minutes. Spread potatoes out on a 9” x 13” baking pan. Bake until browned and soft (approximately 40 minutes). Serve immediately.
